This Bacon-Wrapped Gouda Stuffed Meatloaf transforms a timeless comfort food favorite into a bold, flavor-packed entrée. Ground beef is combined with chopped onions, breadcrumbs, eggs, milk, salt, and black pepper to create a tender, juicy meatloaf with a rich, homemade texture. INGREDIENTS

·      2 lb ground beef - SGC 216061

·      1 chopped onion - SGC 191965

·      2 cups bread crumbs - SGC 057364

·      1 tsp salt - SGC 052613

·      2 tsp pepper - SGC 181404

·      2 eggs - SGC 193003

·      ½ cup milk - SGC 195610

·      8 oz gouda cheese - SGC 054122

·      11/2 lb of thick sliced bacon - SGC 227348

 

Glaze

·      1 cup bbq sauce - SGC 124365

·      ¼ cup of honey - SGC 121908

·      1 TBLS Sriracha - SGC 487030

 

INSTRUCTIONS

1.        In a small bowl whisk together the egg, milk. In a separate small bowl, stir together the breadcrumbs, , garlic powder, salt, and pepper. Mince the onion.

2.        Add the ground beef, egg mixture, breadcrumb mixture, and minced onion to a large bowl. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing.

3.        Divide the mixture into 8 oz portions.  Roll an 8 oz portion out, place 2 oz of gouda cheese sliced into the center and evenly cover with the meat mixture.

4.        Wrap each stuffed meat mixture with 3 slices of bacon using toothpicks to secure

5.        Place in smoker at 250 degrees for 2-3 hours or until internal temperature reaches 155 degrees and basting with the glaze the last hour of smoking every 20 minutes.
