Queso Fundido

This queso dip is not your average dip. Queso fundido is incredibly versatile. The way the shredded cheese is melted to perfection with a layer of chorizo in this recipe, the combination between the two will send your guests raving about this dish. This delicious shareable appetizer is great served with pita chips, tortilla chips, tortillas, or even added on top of a meal. 

 

INGREDIENTS

8oz Hormel Chorizo – SGC# 250429

8oz Queso Chihuahua – SGC# 056992

Mexican Chorizo 

  • 1/2 White Onion finely chopped – SGC# 192006
  • 1 tbsp. finely chopped tomato– SGC# 191957
  • 2 cloves garlicminced – SGC# 192922
  • 8 oz. shredded Chihuahua Cheese  – SGC# 056992
  • 4 oz. shredded white cheddar cheese  – SGC# 356382

 

INSTRUCTIONS

 

  1. Cook the chorizo in a small 8″ or 9″ cast iron pan (or oven safe pan) over medium heat, breaking it apart as it cooks, until browned and crispy.
  2. Transfer to a plate lined with paper towels. Leave the liquid from the chorizo in the pan. Stir in the chopped onion with a pinch of salt. Cook, stirring occasionally, for about 5-7 minutes until the onion is super tender.
  3. Stir in the garlic and cook for another minute. Remove the pan from the heat. Stir in a little over half of shredded cheese, and spread it into an even layer in the bottom of the pan.
  4. Sprinkle 3/4 of the chorizo over this layer, then top with the remaining cheese. Transfer the pan to the oven, and bake at 400 F for about five minutes, or until the cheese has totally melted.
  5. To create a browned, bubbly top, broil the cheese for 2-3 minutes before serving. 
  6. Add toppings of your choosing.
