Pad Thai Sauce
- 3 tbsp fish sauce — SGC# 101545
- 2 tbsp tamarind paste — SGC# 050130

INSTRUCTIONS
- Soak noodles in hot water 8–10 min until just tender. Drain.
- Mix sauce in a small bowl—set aside.
- Sear shrimp in a hot wok or skillet with 1 tbsp oil, 1–2 min per side. Remove.
- Add remaining oil + garlic. Stir for 10 seconds.
- Push garlic aside, scrambling eggs quickly to make an omelet. Hold latter for Garnish
- Add noodles + sauce. Toss over medium-high heat until glossy and tender.
- Return shrimp, add bean sprouts & green onions. Toss 30 seconds.
- Finish with lime, peanuts, extra chili and cilantro leaves.
