Tajin Jicama Shrimp Tacos

INGREDIENTS:

Jicama shells
½ lb- Shrimp, peeled and deveined – SGC# 209061
2 tablespoons olive oil – SGC# 054417
1 tablespoon garlic, minced – SGC# 192922
1 tablespoon Restaurant Marketplace chili powder – SGC# 169920
1 tablespoon Restaurant Marketplace cumin – SGC# 171561
1 tablespoon Restaurant Marketplace smoked paprika – SGC# 191331
½ teaspoon salt and pepper – SGC# 052100; 191565
1 tablespoon Tajin – SGC# 623523
1 -Lime juiced – SGC# 192625
1 cup-Red cabbage, thinly sliced – SGC# 191245
Avocado, sliced – SGC# 192607
Fresh cilantro, chopped – SGC# 193202
Sour cream (optional) – SGC# 193046

INSTRUCTIONS:

Marinate shrimp in olive oil, minced garlic, chili powder, cumin, paprika, salt, pepper, tajin, and lime juice for at least 15 minutes.
In a skillet, cook the marinated shrimp until opaque and cooked through.
Peel jicama and cut into thin, pliable slices to use as taco shells.
Assemble tacos by placing shrimp in jicama slices, and top with red cabbage, avocado slices, cilantro and top with Tajin.
Drizzle with additional lime juice and, if desired, add a dollop of Greek yogurt or sour cream.
