Truffle Miso Carbonara
A rich fusion of creamy carbonara and umami miso, finished with aromatic truffle and crisp pancetta for a decadent twist on a classic.
INGREDIENTS
· 12 oz spaghetti or bucatini
· 3 egg yolks + 1 whole egg
· 1/2 cup grated Parmesan
· 2 tbsp white miso paste
· 1/4 cup reserved pasta water
· 4 oz pancetta or guanciale, diced
· 1 tbsp truffle oil (white or black, to taste)
· Fresh cracked pepper
DIRECTIONS
1. Cook Pasta: Boil in salted water until al dente; reserve 1/2 cup cooking water.
2. Render Pork: In skillet, cook pancetta until crisp; set aside, keeping fat in pan.
3. Mix Sauce Base: Whisk eggs, Parmesan, miso, pepper.
4. Combine: Toss pasta in pancetta fat, remove from heat. Add egg mixture, stirring quickly, adding pasta water as needed for creaminess.
5. Finish: Add pancetta back in, drizzle with truffle oil, serve immediately.
