If you're looking for a great seafood recipe, this classic cioppino recipe is just the ticket. Here’s a simple tasty recipe for Cioppino, an Italian seafood stew. The base is brothy and light, allowing the fresh seafood and fish to really shine. It’s surprisingly easy to make and great for entertaining! It's brimming with seafood, fennel, and garlic, and is fancy enough to be an elegant meal. 

Ingredients

  • 3 tablespoons olive oil – SGC# 065312 

  • 1 large fennel bulb, thinly sliced – SGC# 197137 

  • 1 onion, chopped - SGC# 193557 

  • 3 large shallots, chopped - SGC# 192014 

  • 2 teaspoons salt - SGC# 52100 

  • 4 large garlic cloves, finely chopped - SGC# 192922 

  • 3/4 teaspoon Restaurant Marketplace dried crushed red pepper flakes, plus more to taste - SGC# 191333 

  • 1/4 cup tomato paste - SGC# 081101 

  • 1 (28-ounce) can diced tomatoes in juice - SGC# 080085 

  • 1 1/2 cups dry white wine 

  • 5 cups seafood stock  - SGC# 100495 

  • 1 Restaurant Marketplace bay leaf - SGC# 191722 

  • 1lb Aqua Star seafood medley  - SGC# 488210   

Directions 

  1. Heat the oil in a very large pot over medium heat. Add the fennel, onion, shallots, and salt and saute until the onion is translucent, about 10 minutes. Add the garlic and 3/4 teaspoon of red pepper flakes, and saute 2 minutes. Stir in the tomato paste. Add tomatoes with their juices, wine, seafood stock and bay leaf. Cover and bring to a simmer. Reduce the heat to medium-low. Cover and simmer until the flavors blend, about 30 minutes. 

  1. Add the Aqua Star seafood medley and cook 8 minutes. Season the soup, to taste, with more salt and red pepper flakes. 

  1. Ladle the soup into bowls and serve.
