Roasted Broccolini and Feta

Charred broccolini roasted to perfection, tossed with crumbled feta, lemon zest, and a drizzle of olive oil. A bright, savory side with just the right balance of crisp, creamy, and tangy.

INGREDIENTS

·       2 bunches broccolini – SGC# 192445

·     2 tablespoons of olive oil – SGC# 054247

·     2 tablespoons red wine vinegar – SGC# 128506

·     1 teaspoon Kosher salt – SGC# 052100

·     1 teaspoon Minced garlic – SGC# 192922

·     1 teaspoon dried oregano – SGC# 191761

·     ½ teaspoon crushed red pepper – SGC# 191333

·     ½ teaspoon ground black pepper – SGC# 051109

·     ¼ cup crumbled feta cheese – SGC# 058993

·     ½ Cup Walker Farms Bacon Crumbles – SGC# 215127

INSTRUCTIONS

1.     Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

2.     Trim about 1/4 inch off the bottoms of the broccolini and remove any leaves.

3.     Combine oil, vinegar, salt, garlic powder, oregano, crushed red pepper, and black pepper in a small bowl. Pour over broccolini and gently toss to coat.

4.     Spread broccolini in a single layer on the prepared baking sheet and Roast in the preheated oven until tops are browned and the stems are crisp-tender, about 15 minutes.

5.     Toss In homemade Italian, Feta and Bacon Crumbles.
