Carrot and Zucchini Bars with Lemon Cream Cheese Frosting

 

Ingredients

·   2 eggs, slightly beaten – SGC# 193003

·   3/4 cup packed brown sugar – SGC# 051912

·   1/2 cup canola oil – SGC# 054361

·   1/4 cup honey – SGC# 121908

·   1 tsp vanilla – SGC# 169243

·   1 1/2 cups shredded carrot – SGC# 192476

·   1 cup shredded zucchini – SGC# 192340

·   1/2 cup chopped walnuts – SGC# 141739

·   1 1/2 cups all-purpose flour – SGC# 053330

·   1 tsp baking powder – SGC# 052886

·   1/2 tsp ground ginger – SGC# 191515

·   1/4 tsp baking soda – SGC# 053009

Lemon Cream Cheese Frosting:

·   1 (8 oz) pkg reduced fat cream cheese – SGC# 055130

·   1 cup powdered sugar – SGC# 052001

·   1 1/2 tsp lemon zest – SGC# 192676

 

Instructions   

 

·   Preheat oven to 350 degrees F. In a large bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla. Do not worry about clumps of brown sugar, those will dissolve as it sits while you prepare the remaining ingredients.  Then fold in the carrot, zucchini, and walnuts.

·   In another bowl combine add the flour, baking powder, ginger, and baking soda. Whisk to blend together.

·   Add flour mixture to the wet mixture. Stir just until combined. Spread batter into an ungreased 13x9x2-inch baking pan.

·   Bake about 25 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack.

·   Once the cake is cooled prepare the frosting. In a medium mixing bowl, beat the frosting ingredients with an electric mixer on medium speed until fluffy. Spread or pipe the frosting over the cooled bars.  Makes 36 bars.

Pumpkin Pecan Cobbler

 

Ingredients

For the Cobbler

   1 cup + 3 tablespoons all-purpose flour – SGC# 053330

   3/4 cup granulated sugar – SGC# 051805

   1 teaspoon cinnamon – SGC# 191538

   1/2 teaspoon nutmeg – SGC# 191595

   1/2 teaspoon cloves – SGC# 170142

   1/2 cup pumpkin puree – SGC# 074260

   1/4 cup milk – SGC# 195480

   1/4 cup oil – SGC# 065314

   1 1/2 teaspoons vanilla – SGC# 169243

 

For the Topping

   1/2 cup granulated sugar – SGC# 051805

   1/2 cup brown sugar – SGC# 051912

   1/4 cup chopped pecans – SGC# 141280

   1 1/2 cups very hot water

 

 

Instructions

   Preheat oven to 350 degrees.

   In a medium sized bowl, stir together flour, baking powder, salt, sugar, and spices. Set aside.

   In a smaller bowl, stir pumpkin, milk, melted butter and vanilla together to combine. Pour wet ingredients into dry ingredients and mix to create a thick batter. Pour into a small 8-inch casserole dish with high sides.

In a separate bowl, stir sugar, brown sugar, and pecans together. Spread over the top of the batter evenly. Pour hot water over the entire thing {without stirring!} and bake for 40 minutes or once the middle is set. {Be sure to place on a baking sheet in case it bubbles over.} Cool for 5-10 minutes before serving. Serve with more pecans and vanilla ice cream.
