INSTRUCTIONS
Soak noodles in hot water 8–10 min until just tender. Drain.
Mix sauce in a small bowl—set aside.
Sear shrimp in a hot wok or skillet with 1 tbsp oil, 1–2 min per side. Remove.
Add remaining oil + garlic. Stir for 10 seconds.
Push garlic aside, scrambling eggs quickly to make an omelet. Hold latter for Garnish
Add noodles + sauce. Toss over medium-high heat until glossy and tender.
Finish with lime, peanuts, extra chili and cilantro leaves.
