INGREDIENTS

  • 6 oz rice noodles — SGC# 602910
  • Certi Fresh shrimp, peeled & deveined — SGC# 209062
  • 2 tbsp oil — SGC# 053057
  • 2 cloves garlic, minced — SGC# 301247
  • 2 eggs, lightly beaten — SGC# 193003
  • 1 cup bean sprouts — SGC# 191326
  • 2 green onions, sliced — SGC# 192014
  • Crushed peanuts — SGC# 207262
  • Lime wedges — SGC# 192625

Pad Thai Sauce

  • 3 tbsp fish sauce — SGC# 101545
  • 2 tbsp tamarind paste — SGC# 050130
  • ¼ cup Peanut butter — SGC# 100213
  • 1½ tbsp cane sugar — SGC# 051805
  • 1 tbsp soy sauce — SGC# 087411
  • 1 Tbsp Sambal — SGC# 050135

 

INSTRUCTIONS

  1. Soak noodles in hot water 8–10 min until just tender. Drain.
  2. Mix sauce in a small bowl—set aside.
  3. Sear shrimp in a hot wok or skillet with 1 tbsp oil, 1–2 min per side. Remove.
  4. Add remaining oil + garlic. Stir for 10 seconds.
  5. Push garlic aside, scrambling eggs quickly to make an omelet. Hold latter for Garnish
  6. Add noodles + sauce. Toss over medium-high heat until glossy and tender.
  7. Return shrimp, add bean sprouts & green onions. Toss 30 seconds.
  8. Finish with lime, peanuts, extra chili and cilantro leaves.
