Birria - Style Smash Burger

· Six dried guajillo chiles, stemmed & seeded – SGC# 194336
· Two dried ancho chiles, stemmed & seeded – SGC# 194333
· Three cloves of garlic — SGC# 192922
· ½ white onion — SGC# 193557
· 1 tsp Heritage Harvest cumin — SGC# 170418
· 1 tsp dried oregano — SGC# 181787
· ½ tsp ground clove — SGC# 181142
· ½ tsp black pepper — SGC# 051109
· 1 tbsp apple cider vinegar — SGC# 126135
· Two cups of beef stock — SGC# 101523
· Kosher Salt to taste — SGC# 052100
INSTRUCTIONS
· Toast chiles lightly in a dry pan (10–15 seconds per side).
· Soak in hot water for 10 minutes.
· Blend with remaining ingredients until smooth.
· Simmer 10–15 minutes
· Strain for smooth texture

· Four each 2oz Mill Street Slider beef patties — SGC# 32500
· Two each bun — SGC# 208096
· Oaxaca cheese — SGC# 056100
· Julianne white onion — SGC# 193557
· Fresh cilantro — SGC# 193201
· Lime wedges — SGC# 192625
INSTRUCTIONS
1. Preheat flat top too high.
2. Form 4 oz loose balls.
3. Smash hard onto oiled griddle.
4. Season with salt.
5. Cook until crispy edges form (about 2 min).
6. Flip, brush top with birria glaze.
7. Add cheese immediately.
8. Steam melt with dome.
