Deviled Potatoes

INGREDIENTS

· 2–3 tablespoons sweet pickle relish or finely diced pickles. —SGC# 126946
· 1 teaspoon Dijon mustard. —SGC# 910645
· 1 tablespoon apple cider vinegar (optional) to brighten. —SGC# 128505
· Paprika for garnish. —SGC# 181402
· Salt & pepper to taste. —SGC# 052100; 051109
DIRECTIONS
1. Wash and cook the small potatoes until fork-tender (either boil or steam).
2. Allow potatoes to cool slightly, then halve or scoop out a portion of the flesh (leaving a bit intact for shape).
3. In a bowl, mash the scooped out potato flesh, mix in mayonnaise, relish, mustard, vinegar (if using), salt & pepper until smooth and creamy.
4. Spoon or pipe the filling back into the potato shells/hollows.
5. Sprinkle paprika on top for color.
6. Chill or serve at room temperature.
